I had the opportunity to attend the preview for the Fifth Annual Swan and Dolphin Food and Wine Classic which is being held this weekend on October 31 and November 1. This annual event showcases the food offerings at Disney’s Swan and Dolphin and offers a distinctive dining experience for those who attend.

The food offerings at the Swan and Dolphin Food and Wine Classic are going to be unique each night, and we were able to sample a few of the dishes and all of them were delicious.

Housemade Bacon with Corn Bread Puree, Charred Corn and Smoked Tomato Bacon Ragout-which will be featured on Friday night- was a stand out from the samples offered.

Chef Robert Ciborowski, who has been with the Swan and Dolphin since 2007, was on hand to answer a few questions about his passion for smoking meats and how he’s sampled and tested different kinds of Bar-B-Que around the world. He boasts that his is some of the best anyone will find and I have to say that I absolutely agree.

On Saturday, Todd English’s bluezoo will be featuring a Shrimp Cocktail Steamroller, which deconstructs the shrimp cocktail foodies know and love and turns it into a beautiful and simple sampler. The steamroller is a glass tube that is open-ended. Diners will have to place their hand on one end to cause suction and literally suck the cocktail out  the other to enjoy the food. This will be a highlight at the event for anyone who tries this interesting dish.

Dessert offerings were beautiful and unique as well. I enjoyed the Banana Foster Panini which features homemade caramelized banana puree and vanilla ice cream in a brioche bun. It’s cooked for twenty five seconds to warm the bread but keeps the center cool for a delicious twist on a classic dessert.

Also new to the event this year is the festival Beer Garden. This area will be featuring local craft beers and the roll out of the Swan and Dolphin’s own seasonal brew. Branded Fin and Feathers they will be featuring “Sweet and Mellow” which is a sweet potato and marshmallow flavored beer, which is sure to be a hit at the Classic this year. It also boasts the best pub snacks around like kimchi chips and other yummy treats.

Finally, there will be seminars taught during the event. From Modern Mixology, Wine Blending, and TQU: Tequila University to The Fine Art of Sake and Sushi and Pasta Making with Chef Cib the team who put together this event will share what they’re passionate about and give guests the opportunity to learn something interesting while  enjoying a night out.

Walt Disney World Swan and Dolphin Hotel Announces $125 Million Redesign

Largest renovation in Walt Disney World Swan and Dolphin Hotel’s 25-year history will transform every guest room

 

The Walt Disney World Swan and Dolphin Hotel is getting the largest makeover in its history. The hotel has launched a multi-phase, multi-year, $125 million redesign project that will transform every guest room in the 758-room Swan Hotel and the 1,509-room Dolphin Hotel.

“As we celebrate the hotel’s 25th anniversary, it is appropriate that we mark the occasion with a renaissance of our room product,” said General Manager Fred Sawyers. “Our guests will continue to receive the level of service and hospitality that comes with a quarter century of experience while enjoying a modern new guest room.”

The transformation will occur without disruption to the guest experience as the majority of guest rooms will be available throughout the process. The hotel’s public spaces, restaurants, meeting rooms, shops, pools and recreational areas will not be impacted and remain fully operational throughout the renovation.

Noted hotel and condominium interior design and architecture firm Garcia Stromberg/GS4 Studios, designers of the Conrad Hotel Ft. Lauderdale, the Waldorf Astoria’s Boca Beach Club and One Thousand Ocean condominium in Boca Raton, Fla., created the concept for the new rooms.

The new room design is inspired by the resort’s water-themed architecture. The goal was to create a serene and sophisticated atmosphere.

The guest room features upgraded furniture and all of the latest technology including large HD TVs.  Additional power outlets provide corporate executives and family travelers more options for use of multiple personal electronics.

Blending an artistic combination of whites, blues and grays, the design creates a tasteful ambiance that appeals to adults while abstract artwork playfully delights children as well.

The centerpiece of the room is the famous Westin Heavenly Bed with its all-white custom-designed pillow-top mattress set, cozy down blanket, a trio of crisp sheets, goose down comforter and four over-stuffed pillows.

The design continues into a completely new bathroom, featuring a back-lit mirror mounted on iridescent glass tiles.

The project started at the Swan Hotel, with approximately 500 of the 756 rooms redesigned by the end of 2014. The first phase of the Dolphin Hotel rooms will begin in 2015 with the entire rooms project currently scheduled for completion by the end of 2016.

Amidst a backdrop of live entertainment, celebratory surprises and even some spooky fun on Halloween night, guests will enjoy numerous opportunities to sip and savor all weekend as they stroll along the hotel’s causeway.

The two-night event offers an enticing array of culinary options from the hotel’s award-winning signature restaurants:  Il Mulino New York Trattoria, Shula’s Steak House and Todd English’s bluezoo, as well as wine and spirits sampling from around the globe.

The food selections are as innovative as they are enticing, ranging from Italian arancini, marrying Carnaroli rice, Osso Buco and spicy tomato sauce, and the Asian-inspired grilled scallops with puffed rice, edamame and ponzu jelly; to barbeque handcrafted bacon, accented with sweet potato puree and caramelized onions. And, the hotel’s World Champion Pastry Chef, Laurent Branlard, provides intrigue on the sweeter side with finishing touches like a chocolate crunch Napoleon with hazelnut daquoise and chocolate whipped cream, and a lemon peel mousse dome with blueberry cream and lemon angel food cake at its center.

On April 2, the Walt Disney World Swan and Dolphin Hotel will be joining other iconic buildings around the world — including the Empire State Building in New York City and the Sydney Opera House in Sydney, Australia – and lighting up blue to raise awareness for autism and to commemorate World Autism Awareness Day on Wednesday, April 2.

Light It Up Blue is a unique global campaign that kicks off Autism Awareness Month and helps raise awareness about the disorder. In honor of this historic day, thousands of iconic landmarks, buildings, hotels, bridges and retail stores are among the hundreds of thousands of homes and communities around the globe that illuminate blue to spread autism awareness.

In addition, one of the hotel’s signature restaurants, Todd English’s bluezoo has created a specialty blue cocktail, named blue sparkler, in honor of Autism Awareness Month. Chef completes a 7-foot tall, 400-pound chocolate nutcracker sculpture to add to his annual Christmas display at the Walt Disney World Swan and Dolphin Hotel

 

It’s that time of year when holiday decorations are going up, and for the only two-time world pastry champion that means one thing – chocolate!  In order to give guests of the Walt Disney World Swan and Dolphin a special treat for the holidays, Laurent Branlard – the hotel’s, executive pastry chef – just completed a 7-foot tall, 400-pound chocolate nutcracker that is part of an entire Christmas scene constructed out of nearly 2,000 lbs. of chocolate. 

The nutcracker took approximately 80 hours to complete and is vibrantly colored with reds, blues, and golds. Still, it is 100 percent edible.  

The nutcracker joins a Christmas scene, which will be displayed in the lobby of the hotel through December, that includes a life-sized Santa Claus, fireplace with stockings, Christmas tree, and toy train.

Branlard is renowned for intricate chocolate and sugar sculptures and this piece marks one his largest and most difficult ones to date. 

Just in case any chocolate lovers are thinking of taking on the challenge of consuming this enormous sweet, they should consider that the entire scene is more than 4 million calories! (Please note that the sculpture is not available for tasting.)

From a short rib Oscar, marrying beef, Maryland blue crab, asparagus and hollandaise; to Chinese-inspired vegetarian bao; to a handcrafted convergence of bacon, black-eyed pea puree and maple, the food options are as innovative as they are enticing.  Finishing touches like raspberry s’mores and a milk chocolate mousse dome  with a center of caramel cream and hazelnut dacquoise sponge cake, provide even more intrigue.

My Favorite Restaurants At Walt Disney World

We haven’t really focused much on food specifically and thought it was about time we explored this huge part of most guest’s Walt Disney World vacations. Dining in the parks and at the resorts ranges from Uncrustables to hot dogs, sandwiches and other typical park fare like burgers and fries to some of the finest dining in the world. Today I wanted to share with you some of my favorite signature restaurants at WDW. If you have a Tables in Wonderland membership you are able to save 20% (with an automatic 18% gratuity added back in) at these restaurants. The other great feature of the TiW card is that it allows you complimentary valet parking at the Disney resorts with validation showing you used your Tables card on your dinner receipt.

5. Todd English’s Bluezoo (Walt Disney World Dolphin) The restaurant sits on the lower level of the Dolphin at the bottom of the escalator. The decor reminds me of an upscale club or bar, but more subdued with subtle lighting and lots of blue accents. I’ve only been here once back in November of 2009, but the food was fabulous. My mom and my brother treated me to dinner for my 30th birthday, and it was amazing. The seafood seemed so fresh and the service was great. We started the night off with the zooberry (a twist on the blueberry martini). They were so fresh the perfect way to begin our meal. We shared the beet salad and the classico flatbread for appetizers. For an entree I had the teppan seared jumbo sea scallops, which were magnificent and perfectly cooked. The dessert was a lemon meringue pavlova and was complimentary for my birthday, which made it taste even better.

4. Flying Fish (Disney’s Boardwalk Inn) Situated on the Boardwalk, Flying Fish is decorated with whimsical fish flying through the air with parachutes. The resort’s atmosphere reflecting early 20th century seaside fun with rollercoasters and ferris wheels is carried through the restaurant as well. The first time I experienced the restaurant it was August of 2009, and more recently I returned in February of this year. So, the two times I’ve been here I ordered the same exact things for appetizer and entree and was so full that I didn’t get dessert. The cheese platter changes in the featured cheeses, but was great both times. I guess I really like the scallops in the Epcot Resort area because I have ordered the oak-grilled Maine diver scallops each time. Scallops aren’t even my favorite seafood, but I absolutely love them from here.

3. Citrico’s (Disney’s Grand Floridian Resort & Spa) Featuring a Mediterranean theme, Citrico’s is located on the second floor of the Grand Floridian between Mizner’s and Victoria & Albert’s. The decor and the menu reflect the influences of Italy and Greece and are both aesthetically and gastronomically pleasing. Of the restaurants on my top five list, this is the one I have been to the most, having been more than five times, and most recently in the beginning of March. Each time I have been the food has been absolutely fabulous. One of my favorite seasonal appetizers, which they didn’t have this last time, was the gateau of crab. This past time we had a nice cheese and cracker amuse bouche to start our palates on our dining adventure. I tried something new for my entree and was not the least bit disappointed. The Madeira-braised short ribs were so tender, they were falling apart. Wild mushroom ragout and trofie pasta accompany the short ribs along with a truffle creme fraiche. For dessert I did repeat one of my favorites in the seasonal berry gratin with a champagne – Grand Marnier sabayon. It was just as incredible as when I had first had it in November of 2010.

2. Jiko – The Cooking Place (Disney’s Animal Kingdom Lodge) This is the restaurant I have honestly been craving the most above all others on property. I love the atmosphere here with the gorgeous blue ceiling, setting sunset and beautiful (fake) birds flying overhead. It is an eclectic menu and I like to try different things each time I go. The first time I went was in July of 2008, when I first stayed at the Animal Kingdom Lodge. I remember having the ostrich filet as an appetizer and the Kenyan coffee barbecue braised short ribs (another favorite of mine apparently). They were both so tender and falling apart in my mouth as I took each bite. On subsequent visits I have had the Taste of Africa bread and dipping sauce service, kalamata olive flatbread, duck and stonefruit salad, oak grilled filet mignon with mac and cheese, and seared barbarie duck breast. I can say that each of the three times I’ve been, the last time being in November of 2010, the service and the quality of the food have been nothing short of fantastic.

1. Victoria & Albert’s (Disney’s Grand Floridian Resort & Spa) Ah, la creme de la creme. Victoria & Albert’s is a 13 time AAA Five Diamond award winning restaurant. I’ve only been here once, and would love to go back if someone else is paying. This is not to say that the price isn’t worth it (I want to say it was about $475 for two with the wine pairing and gratuity included AFTER my Tables in Wonderland discount), it is. I’d just prefer to have someone else pay, and I’d like to do chef’s table next time. But I digress. This meal is easily within my top five, if not top three meals I’ve ever eaten. The service was beyond impeccable. Situated on the second floor of the Grand Floridian, Victoria & Albert’s is hidden behind large wooden doors with frosted windows. The decor is a refined elegance not to be found elsewhere at a Disney restaurant. It is one of only a few Five Diamond restaurants in the state of Florida. I went with my mom for my 29th birthday present in 2008 and it was an incredible dining experience. There were amuse bouche, palate cleansers, about seven courses, coffee, dessert, and the aforementioned wine pairing to go with each course. This is most definitely a culinary experience, not simply a meal. You need every bit of the three plus hours they warn you about when you book. One of my favorite aspects of the pre-arrival communications with the restaurant is the conversation about your allergies, likes and dislikes. This is so the restaurant can customize your menu to you so you are not being served something for hundreds of dollars that you do not enjoy. I don’t recall the specific menu items, as there were so many, but there wasn’t one I didn’t like. I’ve included a picture of the general menu for the evening. Each guest also receives a personalized copy of their menu to take home, which I am unable to locate at the moment.
