Over the past few years I have become somewhat obsessed with not letting food go to waste, and as I was staring at the three lone ripe bananas sitting in the fruit basket my mind started spinning!

I checked the staples that I had in my pantry, pulled the bananas out of their basket, and headed to Pinterest!

Once there I found a really awesome recipe from Lux Hippie on Tumblr for Peanut Butter Banana Oatmeal Cookies!

The recipe is SUPER easy, and amazingly delicious! What is also great is that with a few slight changes, they can also be Vegan making them a perfect treat for get togethers!

Seriously, this recipe should come with a warning because you won’t be able to stop eating them!!!

Peanut Butter Banana Oatmeal Cookies Ingredients:

  • 3 ripe bananas, mashed
  • 1 tablespoon vanilla
  • 1/2-1 cup natural chunky peanut butter (depending on how much peanut buttery goodness you want)
  • 4 tablespoons maple syrup
  • 2 cups rolled oats
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt (note: if you are using salted peanut butter, you may not need any salt, do a taste test with the batter)
  • ½ cup semi-sweet chocolate chips (I used milk chocolate chips, but you could even use raisins if that’s your thing)

Peanut Butter Banana Oatmeal Cookies Directions:

Preheat oven to 350 degrees F

In a large bowl, mix bananas, vanilla, peanut butter and maple syrup into a creamy consistency (best to do with a hand or stand mixer).

In another bowl, combine oats, flour, baking powder and salt together.

Dry Ingredients

 

Add the dry ingredients to the wet ingredients and stir until they are well combined, the batter should be slightly sticky. Fold in the chocolate chips. The batter will be somewhat runny, this is ok.

I wanted to share a pictures of the consistency of the Peanut Butter Banana Oatmeal Cookie dough, because it is very different than ‘normal’ cookie dough. Don’t worry…I promise!

Place heaping tablespoon-sized balls of the batter (I used a medium sized cookie disher) onto a ‘greased’ baking sheet (can also place on parchment paper) and cook for 15 minutes.

This recipe makes around 2 dozen cookies, and after they have cooled make sure to store them in a tupperware container to make them last up to a week (If they make it that long without being eaten).

These were great cookies to grab in the morning on the way out of the door and perfect for Zoe’s snack at school since they can have peanut items in their classroom.
